Easy Yummy Strawberry Pie

I got this delicious recipe from a great friend who is also a great cook and have made 3 of the pies in 3 days. That's how yummy it is. I made 2 for the same friend's baby shower this past weekend and 1 for small group tonight. Sadly, hubby had me throw away the left-over pie tonight after small group, so he wouldn't be tempted to eat it. I guess I should be thankful and praise him for his discipline, but I was so upset to throw away such a tasty treat. Here's the recipe...

Strawberry Pie

1-8oz pkg cream cheese, softened

1 c. confectioners sugar

1 teasp. Vanilla

1 c. heavy cream plus 1/4 c confectioners sugar to sweeten

1-9 inch shortbread ready crust pie shell

2 c. fresh strawberries, sliced and sprinkled with confectioners sugar

•In medium bowl, mix cream cheese and confectioners sugar til smooth and creamy. Stir in vanilla extract. In separate bowl, whip cream and sugar til peaks form. Fold into cream cheese mixture. Spread on bottom of pie shell. Chill to set.

•Slice strawberries and add sugar to sweeten. Refrigerate

•Just before serving, top with sweetened strawberries . Enjoy!!

Menu Plan Monday

This will be another busy week for us. We will only be home 2 nights to cook, possibly not even those 2 nights because we are helping friends move into their new home. I am loving summer time, spending all of my time with my wonderful hubby!

Monday - Out of town
Tuesday - Red beans & rice for our small group
Wednesday - Dinner with friends & fireworks after church!
Saturday - BBQ at in-laws for the 4th of July
Sunday - Dinner at small group

Blueberry Dessert Recipe

This is a quick and easy dessert recipe that I got from a friend this week.  I didn't think to take a picture, but I will post one the next time I make it. It's so easy and so yummy!

-Graham cracker crust
-8 oz. block of cream cheese
-1/3 cup sugar
-1 tsp. lemon juice
-8 oz. cool whip
-1 1/4 cup blueberries

Mix cream cheese, sugar, and lemon juice. Add in cool whip and mix. Fold in blueberries. Pour mixture over crust. Refrigerate for 3 hours. Enjoy!

Our Mini-Vacation

We've been home from our mini-vacation for over a week now. I meant to post pictures last week but never got around to it until now. Casey had an intensive class at Liberty University in Lynchburg, VA, and I got to go with him since I'm off work for the summer. We love traveling together, no matter where we're going, so we had a great time. It was nice to just get away from our normal routine and have so much time together. We stopped in Greenville, SC on the way up to Lynchburg for one night and then on the way home for a long weekend. We visited Greenville for one night on our anniversary trip back in December and liked it so much that we wanted to go back. It's such a cool, fun city.

Menu Plan Monday


Here's our menu for this week. Check out lots of great menus at orgjunkie.

Monday - Taking chicken casserole to small group (My recipe is a little different, but this one's very close...I use cornflakes on top instead of ritz. I also add a little lemon juice to the mixture.)

Tuesday - Serving chicken casserole again at our small group, green beans, salad
   No bake blueberry dessert (will post recipe soon)
 
Wednesday - Pot roast with mixed veggies

Thursday - FREE Chick-Fil-A sandwiches :)

Friday - Meatloaf with black-eyed peas and asparagus

Saturday - Date Night

Menu Plan Monday...Home Sweet Home


We are heading back home today and have enjoyed a wonderful vacation together! It was much needed quality time. It's always great to escape for a while with my one and only. I have to brag on my hubby a bit. In his graduate intensive class last week, he made a 100 on his pre-class work that he worked so hard on! I'm sure he'll do very well on the post-class work also. Quitting his job to focus on school is proving more and more to be such a good choice for us right now. I'll post pics from our trip soon, but for now, here's what we'll be feasting on this week.

Monday - Throwing something together when we get home and start ALL the laundry...possibly a casserole from my freezer. Whenever I make a casserole, I often make an extra one to freeze for nights like this.

Tuesday -  Buffalo chicken dip, baked ziti (recipe below), and salad for our small group
*My recipe for the buffalo chicken dip is a little different (it's at home), but this one is very close and it's always a hit!

Wednesday - BBQ Glazed chicken, sweet potato fries, sauteed spinach

Thursday - Steak and veggie kabobs...a summer favorite!

Friday - Chicken picatta w/ broccoli & salad

Saturday - Date Night

Sunday - Rosemary ranch chicken w/ green beans 

Baked Ziti Recipe
-1 package whole wheat ziti noodles cooked according to directions on package
-1 lb. ground beef
-1 jar spaghetti sauce (sometimes 2 jars depending on how saucy you want it)
-1 onion, diced
-1 16 oz. container ricotta cheese
-shredded mozzarella cheese
Brown ground beef with onion. Spread thin layer of sauce on bottom of baking dish. Then layer the ingredients in this order: cooked ziti noodles, sauce w/ meat, ricotta, and mozzarella. 
Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.

Here's to Reading!

As a kid, I loved to read. Both my mom and grandmother love to read, and I was read to frequently. My grandmother took me to the public library at least once a week every summer, and I loved these trips to the library, listening to books read-aloud downstairs in the kids area, searching the shelves for that "just right" book, studying the characters and relating to them. Reading a book was like an adventure to me. 
Then came junior high, probably the least favorite years of my life thus far. I wanted so badly to fit in, to be cool, and popular. From my perspective as a 12 year-old, reading and being in the gifted class did not help make one cool. I dropped out of the gifted class in 7th grade because I wanted to be "normal." I wanted to be a cheerleader above anything else. I finally made the cheerleading squad in the spring of 8th grade, after 2 unsuccessful try-outs. At this point, I quit taking piano lessons (which I had taken for over 6 years). I also stopped reading. Suddenly, I didn't enjoy reading...or so I said. I no longer wanted to be "the smart kid." Every year I had been voted "Most Intelligent" in our grade. I hated that more than anything. I told everyone, I think in 9th grade, to please not vote for me for that any more. So I was a "cool" cheerleader. I made friends with the popular girls. I thought this would bring me happiness. Don't get me wrong, I truly enjoyed cheerleading, and I made great friends, some of whom I'm still close to today. I had been a gymnast when in elementary school, and cheering was a great fit for me. I just wished I hadn't felt the need to give up other parts of me and that I hadn't conformed to what I thought I was supposed to be. 
In college, I wasn't so concerned about all of this any more. I actually admitted that I enjoyed writing and proofreading papers. I found that I was accepted for who I was by most people around me. I had a fabulous college experience. I enjoyed reading for school, but I still didn't make much time for my personal reading.
This all came to mind today as I was sitting in Barnes & Noble, while my hubby was in class. I was actually reading a book about teaching reading, called Reading with Meaning, by Debbie Miller. It was one I had heard all about and wanted to read for a while. Yesterday, I decided to go into Barnes & Noble for lack of anything better to do. Most of you probably know me well enough to know that I don't like being alone. This was a big step for me to go into B & N alone because I feel so awkward just sitting by myself in front of other people. Crazy, I know. I had the best time sitting by the cafe with a book and my Starbucks drink in hand, which definitely helped calm my nerves. I could so relate to Debbie's words about teaching primary children reading. I laughed, smiled, and even teared up as I read each page. I remembered how much I love to read! Many times I've heard that in order to teach children to read, you have to be a reader. To teach them to truly love reading, you must model a love of reading. So here I am at 25 year old, returning to my love of reading. I'm no longer ashamed but proud of it. I'm currently reading 3 different books, 2 nonfiction and 1 fiction. I purchased 4 books today, including 2 for my students. I even paid to become a Barnes & Noble member. I figure with all the reading I have planned, the discount will come in handy, and the fact that the discount works at their Starbucks too was a big motivator. Here's to reading!

Menu Plan Monday...on the Road

We are currently out of town. My hubby has an intensive class for grad school this week, and I'm blessed to be able to come with him since I'm off work for the summer. We're having a wonderful mini-vacation. We have a kitchen in our room so I can keep us on track with our budget and healthier eating. I'll be somewhat limited because there's no oven or grill, and obviously nothing in the fridge, freezer, or pantry. I did bring some of my stockpile from home though. :)  We also brought our p90x DVDs. We started p90x last Monday, June 1st, and we are absolutely loving it! We'll see how much I actually get accomplished this week away from home. Here's my menu plan for the week. 

Sunday - Traveling

Monday - Whole wheat spaghetti and salad


Wednesday - Greek chicken and rice dinner (using wild rice in place of white rice)

Thursday - Stir-fried chicken and veggies

Friday & Saturday- Mini-vacation on our way back home!

Here is our menu for this week. Better late than never. All of our dinners cost $5 or less. I used coupons on many of the ingredients including the free ones.

Monday - Chicken tortilla soup (Total cost = $4.55)
*Chicken breasts ($3.00)
  *Black beans ($0.80)
  *Frozen corn (FREE)
*Salsa (FREE)
*Onion ($0.50)
*Shredded cheese ($0.25)
*We omitted the tortilla chips, and I already had all the spices at home.

Tuesday - Tacos (Total cost = $2.92) 
*Taco Bell dinner kit ($0.38)
*Ground chuck ($1.99)
*Shredded cheese ($0.25)
*Daisy sour cream (FREE)

Wednesday - Dinner out/ Church

Thursday - Left-overs (FREE)

Friday - Chicken tetrazzini (Total cost = $5.00)
*Chicken breasts ($3.00)
*2 cans cream of chicken soup ($1.00)
*Whole wheat spaghetti (FREE)
*Butter (FREE)
*2 cubes chicken bullion ($0.50)
*1/4 cup shredded cheddar ($0.50)
*Serve with mixed veggies (FREE)
