Menu Plan Monday...Home Sweet Home


We are heading back home today and have enjoyed a wonderful vacation together! It was much needed quality time. It's always great to escape for a while with my one and only. I have to brag on my hubby a bit. In his graduate intensive class last week, he made a 100 on his pre-class work that he worked so hard on! I'm sure he'll do very well on the post-class work also. Quitting his job to focus on school is proving more and more to be such a good choice for us right now. I'll post pics from our trip soon, but for now, here's what we'll be feasting on this week.

Monday - Throwing something together when we get home and start ALL the laundry...possibly a casserole from my freezer. Whenever I make a casserole, I often make an extra one to freeze for nights like this.

Tuesday -  Buffalo chicken dip, baked ziti (recipe below), and salad for our small group
*My recipe for the buffalo chicken dip is a little different (it's at home), but this one is very close and it's always a hit!

Wednesday - BBQ Glazed chicken, sweet potato fries, sauteed spinach

Thursday - Steak and veggie kabobs...a summer favorite!

Friday - Chicken picatta w/ broccoli & salad

Saturday - Date Night

Sunday - Rosemary ranch chicken w/ green beans 

Baked Ziti Recipe
-1 package whole wheat ziti noodles cooked according to directions on package
-1 lb. ground beef
-1 jar spaghetti sauce (sometimes 2 jars depending on how saucy you want it)
-1 onion, diced
-1 16 oz. container ricotta cheese
-shredded mozzarella cheese
Brown ground beef with onion. Spread thin layer of sauce on bottom of baking dish. Then layer the ingredients in this order: cooked ziti noodles, sauce w/ meat, ricotta, and mozzarella. 
Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.
