We are currently out of town. My hubby has an intensive class for grad school this week, and I'm blessed to be able to come with him since I'm off work for the summer. We're having a wonderful mini-vacation. We have a kitchen in our room so I can keep us on track with our budget and healthier eating. I'll be somewhat limited because there's no oven or grill, and obviously nothing in the fridge, freezer, or pantry. I did bring some of my stockpile from home though. :) We also brought our p90x DVDs. We started p90x last Monday, June 1st, and we are absolutely loving it! We'll see how much I actually get accomplished this week away from home. Here's my menu plan for the week.
Sunday - Traveling
Monday - Whole wheat spaghetti and salad
Thursday - Stir-fried chicken and veggies
Friday & Saturday- Mini-vacation on our way back home!
